Making the jaggery syrup:

Making the batter:

- Slowly add the jaggery syrup to the flour mixture and mix well. The batter should be thick and smooth, not too runny. If the batter is too thick, you can add a little water to achieve the desired consistency.
Cooking the pakundalu:
- Heat a non-stick or cast iron griddle over medium heat. Once the griddle is hot, spoon a small amount of batter onto the griddle and spread it out into a thin circle using the back of a spoon or your fingers.
- Cook the pakundalu for about 1-2 minutes on each side until golden brown.
- Once cooked, add ghee on top of it. Ghee will give a nice flavor and crispiness to the pakundalu.
- Repeat the process with the remaining batter.
