Ingredients to Prepare Boti Curry:

  • 500g mutton boti (lamb or goat meat cut into small cubes)
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2-3 green chilies, finely chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 2 cups water
  • Coriander leaves for garnish

Here are the Instructions to Make Telangana Style Boti Curry:

  1. In a pan, heat oil and add cumin seeds. Once they start to crackle, add the onions and sauté until they turn golden brown. This will take around 5-7 minutes on medium heat.
  2. Add the ginger-garlic paste and green chilies and sauté for a minute. This will add a nice aroma to the dish.
  3. Add the tomatoes and sauté until they turn mushy and the oil starts to separate. It will take around 5-7 minutes.
  4. Now add the red chili powder, coriander powder, turmeric powder, and salt. Mix well and sauté for a minute. This will help the spices to release their flavors and aromas.
  5. Add the mutton boti and sauté for 5-7 minutes on high heat. This will help the meat to brown and seal in the juices.
  6. Add 2 cups of water and bring the curry to a boil. Then reduce the heat to low and cover the pan with a lid. Cooking the curry on low heat will help the meat to cook through and become tender.
  7. Cook the curry for about 30-40 minutes or until the mutton boti is tender and the gravy has thickened. You can check the tenderness of the meat by piercing it with a fork or knife. If it’s easy to cut through, it’s done.
  8. Garnish with coriander leaves and serve hot with rice or roti. This dish is best enjoyed with steamed rice or with Indian bread like naan, paratha, or roti.

  • You can adjust the number of chilies according to your taste, add more or less as per your preference.
  • You can also add some whole spices like cinnamon, cardamom, and cloves to add more flavor to the curry.
  • If you want a thicker gravy, you can add some tomato puree or grind some soaked cashews and add it to the curry.
  • You can also add some yogurt to the curry to make it creamier.
